The wine is vinified and aged in our cellars of Puligny-Montrachet according to the same method as for our wines of Burgundy.
Aging in oak barrels of which 20 % new casks, for a period of 11 months, during which alcoholic fermentation and malolactic fermentation are carried out, followed by a fetching for unification in stainless steel vats before bottling.
A fresh and light nose, an exoctic mouth accompagnied by a nice length, notes of summer flowers. This cuvée reminds us of the un of the South, its fruity gourmand and its freshness has seduced our clientele, François Carillon continues to vinify this wine under the name of Cap au Sud and Bergerie.
